“Creamy” Cauliflower Soup
Blender girl is right – this is totally easy and outsizedly delicious. Here’s all you do:
– Sauté 2-3 minced garlic cloves with the white parts of 2 leeks (thinly sliced) in 2tbsp olive oil until soft ~3 min
– Add in a chopped head of cauliflower and sauté another minute
– Add in 7 cups of broth (she says vegetable, I used 4c beef broth that I had in my freezer and 3c water – totally fine)
– Bring to boil then simmer until the cauliflower is soft ~20 minutes
– Remove from heat then add in 1/4c raw nuts. I used cashews, she says blanched almonds or macadamias work too
-Blend using your IMMERSION BLENDER (or regular blender if you’re like blender girl)
– Serve garnished with chives (or she says nutmeg works too)
