Loaded Banana Pancakes

My almost toddler still doesn’t have teeth, can’t use utensils, and insists on feeding herself. This means what I feed her needs to be solid enough that she can hold it and soft enough that she can “chew” it. Also I want it to be nutritious and all that.

2-ingredient banana pancakes are awesome because I’m a fan of both bananas and eggs, and you can add other stuff in to make them even better. They’re easy to make, and the kid loves them.

Pancake recipe:

  1. Smash a ripe banana until pudding consistency
  2. Mix in 2 eggs
  3. Mix in anything else (I do peanut butter, vanilla, salt, and chopped spinach)
  4. Heat skillet, add butter if desired
  5. Use a tablespoon or similar to make small pancakes. Be careful when flipping
  6. Keep in the fridge
