Broccoli Kale Quiche with Sweet Potato Crust
Saw quiche in a coffee shop this afternoon and got a craving. This totally sated it.
From My Utensil Crock – basically just make a sweet potato crust by:
– thin (mandolin) slicing sweet potatoes
– putting them in a pie pan, and
– baking at 400*f for 15 minutes.
Then pour in your quiche and bake at 375*f for 30 minutes.
I followed their quiche recipe except that I used 4 full eggs instead of half egg whites, and I didn’t measure anything else, so who really knows. But it was super delicious!!
