Cinnamon Almond-flour Muffins
And finally the dessert course of our ridiculous feast: cinnamon muffins. The original recipe from GAPS Test Kitchen calls for raisins, which would have made them sweeter and more dessert-like (or really they’re supposed to be for breakfast), but we didn’t have any so used nuts instead. Still, with chilled crème fraîche on top, these made a delicious end to the meal.
Mix together:
– 3c almond flour
– 1/4c coconut flour
– 1/2c flax meal
– 3tsp baking soda
– 7 eggs
– 1/2c softened butter or coconut oil (we used butter)
– 2tbsp apple cider vinegar
– 1/2c honey
– 1/2c nuts (or raisins, if you have them)
– 3tbsp cinnamon
Allow to sit for ~10 minutes to “activate” the flax
Spread into greased or lined muffin tin
Bake at 350*f for ~18 minutes
