Almond Flour Pancakes

Sam’s pancake post made me crave pancakes. While I didn’t have time to make something quite so elaborate, I did have time to make The Food Lover’s Kitchen‘s easy almond meal pancakes:

Mix together:
– 1 3/4c almond flour
– 2 eggs
– Salt
– Vanilla
– (We also added almond extract to accentuate the almond. This was delicious!)
– Cinnamon
– Nutmeg
– Water – for consistency. They said 2/3c but that seemed like way too much to us, and the batter was pretty runny as it was
I did this all in one bowl. It was fine.

Fry these in butter. We served with more butter (obviously) and maple syrup, but you can be more creative.
