Sweet Onion Cups with Sweet Potatoes and Matzah Pinenut Honey Crumble

  First of all, gluten-free matzah is way better than regular, which is not something you can say about much. Second – super funny that THIS is the recipe they have on the back of the box! But it was fun to make, and pretty delicious. Only deviation was using pinenuts instead of pecans. 

A note: They say you can just push the core of the onion out, but you cannot! I had to cut it apart from the inside and the pull out the pieces like it was laparoscopic surgery.
