Roasted Spaghetti Squash with Almond Butter Curry
This was awesome! I love spaghetti squash and need to use it more. And the fact that they end up in their own cute little boats at the end, extra amazing! Although the spaghetti squash I chose was pretty big, so if you really want to do individual portions then make sure yours is small. I got the recipe from Whole Foods and did everything they did, except cooked it for a while longer – both the squash pre-filling, and the whole assembled thing. I also added more salt (and pepper… and paprika) to the squash strings than they called for. Basically, I followed the recipe, for once.
