Smashed Sweet Potatoes

   This is such a delicious and easy side – I got the recipe from my friend Adrianne, and literally all you have to do is:  

– Roast whole sweet potatoes at 350*f until almost done ~30 minutes (starting to get soft, but not mushy)

– Smash the sweet potatoes flat and drizzle with
— Coconut oil
— Lemon juice
— Thyme (or other herbs)
— Salt

– Bake for another ~20 minutes at 400*f until brown and crispy!
