Tomato, Cucumber, and Red Onion Salad with Parsley

  Super easy summer salad – reminiscent of something Mediterranean, largely taken from this Epicurious recipe (using parsley instead of mint and using balsamic instead of red wine and not letting the cucumbers sit for nearly as long as they say…)  Here’s how it went down:

– Chop up cucumbers into small, bite-sized pieces
– Place in a large bowl and add in vinegar (we used balsamic), a little sugar, and a little salt
– Let stand for as long as you can stand it, tossing occasionally

– Add in chopped cherry tomatoes, red onion, and parsley, and toss with olive oil

– Serve!!
