Mini Breakfast Quiche

This was my third attempt at using muffin tins to create individual breakfast portions, and it worked pretty well!

We used a recipe from Ancestral Chef for egg muffins which turned out to just be mini quiches, so I say use this as a basis for your favorite quiche recipe!

This one just called for chives (we used green onions), kale, coconut (or almond) milk, and eggs, mixed together and baked in muffin tins (2/3 full) at 350*f for ~30 minutes. Either grease the muffin tins, or line the with some sort of meat product. We used turkey bacon for some and prosciutto for others.

Pretty, easy, and delicious!
