Scallion Kefir Cheese

Like scallion cream cheese, but better for you (and tangier). They explain the whole process on grow forage cook ferment.

All you do is make kefir, then pour it into cheese cloth, tie the cloth to a wooden spoon (or twisty-tie it like I did) and hang it over a bowl to drain for a day or so.

Then add in salt and whatever additions you want (i.e., scallions) and you’re ready to go!
