Korean Beef Tacos with Magic Green Sauce
So this was delicious – the meat especially. And honestly not that time consuming to actually make, seeing as the somewhat time consuming parts you can do ahead. It’s from Pinch of Yum (whose interlinking blog system led me down a delicious hole… soon to be visited again for sure!) and this is what we did:
The MEAT!
– Slice 2 lbs of sirloin into thin pieces
– Marinate for at least 30 minutes in a blended mix of:
— 2 pears (peeled – not sure if you need to do this, but I did…)
— 2 inches of ginger
— 4 garlic cloves
— 1/4c tamari
— 1/4c brown sugar
— 1 tbsp sesame oil
– Cook the meat in a very hot pan, browning on both sides
The MAGIC GREEN SAUCE! (this makes a lot…)
– Blend together:
— Avocado
— Parsley
— Cilantro
— Jalapeño
— Juice of 1-2 limes (we did 2)
— 1/2c Water
— 1/2c olive oil
— 1 tsp salt
– Pulse in 1/2c pistachios
– Other things for the tacos:
— Chopped herbs – we used: cilantro, basil, parsley, green onion
— Kimchi
— (If we had it to do over, we would have added shredded cabbage)
— (If you’re making burritos instead, you can make rice)
– Fill corn tortillas to taste, after you warm them on the burner
To be honest, I didn’t think the four of us were going to go through all the meat – especially since this wasn’t all we were serving, and since we’d snacked so much during the cooking phase, but we devoured it! Super super super delicious!
