Tomato Basil Soup and Grilled Cheese!

  Apparently it’s National Grilled Cheese Day??? Which is amazing because I was already craving and planning to make tomato soup and grilled cheese. So exciting!! (P.S. – What’s with all the Days for Everything?)

I found this recipe on Food52 which looked perfect, mainly because it mostly called for ingredients I had bought for a different tomato soup recipe that on closer inspection looked a little too simple…. And I made the following alterations:

– I used diced tomatoes instead of whole (I’m sure immaterial)
– I didn’t have tomato paste, so I decided to reduce the amount of chicken stock I used (probably closer to 3 cups instead of 4)
– I blended the soup! Which it looks like they did too, although they didn’t say to 

– Also, there are some missing directions in terms of when to add what, so I added:
— The garlic after the onions were basically done caramelizing
— The chicken stock with the tomatoes
— The spices at the end

Perfect, delicious, love it!!!

As for the grilled cheese, I used a mix of swiss, munster and white cheddar. Also perfect and delicious.
