Avocado Chicken Salad Lettuce Wraps
Bringing lunch to work is repeatedly a struggle for me – especially if it doesn’t consist of leftovers from the night before. So when a friend told me about this recipe from Robin’s Sweet Confessions, I was super excited. And sort of followed it – here’s what I did:
– Sauté a bunch of chicken breast with coconut oil, salt, and pepper until it’s browned and cooked through
– Chop up a bunch of stuff to mix in. I used:
— Granny Smith Apple
— Broccoli stem (because you don’t really notice it and it’s good for you and what else are you gonna do with those?)
— Walnuts
– Mash up an avocado with lemon juice, salt, pepper, and paprika or any other herbs/spices you want (this is my substitute for mayo – as always)
– Mix everything together!
You can eat it like this, or wrap it in lettuce leaves for a portable, fork-free option. So easy and good!!
This looks great! I’ve made almost this exact dish, but with shredded chicken so it all mixed in more easily.
