Cheesy Zucchini Polenta Bites
I love google. I know everyone does, even if they don’t want to, but seriously. Last night I was so tired and I had just picked up some polenta and a zucchini and I had some random cheese in the fridge and I just entered all that into google and poof! It have me this recipe from Kids Cooking that was quick and easy and delicious and pretty and good for you – the holy quint! Here’s what you do:
First
– Slice the polenta ~1/2in thick, brush with olive oil, and bake at 325*f for ~8min
Meanwhile
– Slice the zucchini into ~1/4in rounds
– Sauté in olive oil, garlic, and salt and pepper for a few minutes until starting to soften (totally to taste – I don’t mind raw zucchini so I just cooked it til the polenta time was up)
Then
– Flip the polenta circles over
– Place a zucchini round on each one
– Sprinkle with cheese – I used a Romano and some other hard cheese I had in the fridge, but I’m sure anything would work (also you could put a layer of cheese between the polenta and the zucchini, which would probably help the whole thing stay together when you’re eating it later – just a thought)
– Bake for a few more minutes until the cheese is melted
– Serve!
