Chocolate Toffee Matzah
Finally something I made to share that was actually worthy of sharing! These were stupid good. And they break into these odd-sized pieces, which means that people can be like, “well maybe I’ll have another little one… and another little one…” Also you can top them with whatever you happen to have in your cupboards. In my case this was:
– Mixed nuts that I crushed up
– Pumpkin seeds
– Coconut
– Crushed up candy canes
The original recipe comes from Zoe Bakes, and it goes like this:
Make the caramel
– Stir together on medium-high heat for ~3-5 minutes:
— 1/2c brown sugar
— 1 stick butter
(They say double this, but this ended up with plenty of caramel for the one large cookie sheet of about 4 matzoh) (Also this may have been my first time successfully making caramel, where it gets that glossy, gooey texture, which I guess was a waste because apparently this recipe will still work even if your caramel turns gritty and clumpy) (Also someone recently told me that if you put an unopened can of sweetened condensed milk into boiling water for ~10 minutes, it will turn into caramel, so that’s another option)
– Line a baking sheet with tinfoil (really helps with cleanup!) and then with matzah
– Spread the caramel evenly on the matzah
– Bake at 350*f for ~10 minutes (they say 15, but this was plenty for me – just watch them)
– Sprinkle the matzoh with chocolate chips and let them sit until they melt, and then spread evenly
– Then sprinkle with whatever toppings (and kind of press them in so they stick)
– Then put them in the refrigerator to cool completely before breaking into pieces and serving
