Coconut Pumpkin Seed Macaroons
Remember those pumpkin seeds I toasted to put in the broccoli but then left on my counter? Well I decided to use them in place of almonds in this insanely easy and delicious recipe from Martha Stewart
Mix together:
– 1 egg white
– 1/3c sugar
– 1c coconut
– 1/4c pumpkin seeds (or really anything)
– Vanilla
– Salt
Form into ~8 mounds and bake at 350*f until they start to turn golden – about 15 minutes
