Massaged Kale Salad with Apples, Avocado, and Sunflower Seeds
Again, you probably know all you need to know from the title, but this was delicious and I highly recommend the combination. My cousin Wendie makes an incredible massaged kale salad. I couldn’t find her recipe, so I just did this:
– Chop the kale and mix it with olive oil, lemon juice, salt, and pepper
– Use your hands to massage the mixture into the kale for several minutes – this softens the kale and almost makes it taste cooked!
– Add sunflower seeds and chopped apples and avocado (or any other fixings) to the kale and toss to combine. The lemon juice from the kale keeps the apples from turning brown, which is an added bonus.
