Sweet Potato and Kale Hash with Fried Egg
My friend Mindy just moved into a new apartment close to me! When I went over for what ended up being dinner, we weren’t totally sure what to make with her random assortment of just-moved-in ingredients. Google to the rescue!! Sweet potato, kale, eggs, go: Enter this recipe from Shared Appetite which we were totally able to approximate:
– Dice a sweet potato
– Add in spices – we had salt, pepper, chili powder, and cumin. They suggest paprika and red pepper flakes as opposed to chili, but not bad!
– Sauté in coconut oil (they said olive) until soft in the center and a little crispy on the outside (~15 min)
– Add in chopped kale and let soften and shrink before you arrange the whole thing on plates (they also say to add in red bell pepper, but we didn’t have one) (they also suggest using frozen kale which, I guess it’s good to know that that’s an option, but why? Fresh worked great)
– Fry eggs and place one on each plate
– Sprinkle the whole thing with scallions (actually they said to put shallots in with the sweet potatoes in the beginning, but that’s not what we had, and the scallions were a beautiful and tasty addition)
– Serve!
We also sprinkled hot sauce on top, which I’m realizing I actually kind of like! Yeah, I know, apparently I’ve been living under a rock
