Chickpea Flour Flatbread

Chickpea flour is amazing (or really again I’m using the garbanzo/fava blend). This flatbread from This Gluten-Free Life was so quick, and you can totally make sandwiches with it – or better yet, panini!

Mix together equal parts
– Warm water
– Bean flour

Add in spices:
– Salt
– Pepper
– Cumin (or whatever. Nutmeg might be awesome)

Add in
– Olive oil
– Sautéed onions (optional – I’m actually not sure I liked this addition because it made the texture more mushy than it would have been otherwise. Maybe some super caramelized onions would be awesome)

Put the whole thing in a greased pan in the oven and bake at 450*f for 15+ minutes (longer for thicker breads – mine took about 23, but I would suggest making a thinner bread and just using a bigger pan)

Done! Since I’d made the thicker kind, I sliced it in half and put stuff in the middle, like cheese, and melted it in a skillet to further brown and crisp the bread.
