Breakfast Fruit Salad with Quinoa

Ok so I’m getting a little sick of smoothies (or really I’ve promised myself I wouldn’t use my broken immersion blender, and have been too lazy to get a new one) So how about a breakfast fruit salad?

I found this inspired recipe from two peas & their pod and took the essentials from it to make this recipe.

The essentials:
– Cooked quinoa (I used left over from the Eggplant Curry)
– Fruit – I used banana, blueberries, and avocado (I had a mango too, but when I cut it open it was rotten – wtf??)
– Dressing made from honey, a citrus (they said lime juice, I used orange juice), and a fresh herb (they said mint, I used basil)

Healthy hearty breakfast – yum yum yum.
