Roasted Beets with Goat Cheese
You know what makes everything better? Goat cheese – even leftover roasted beets that have been sitting in my fridge for days become exciting and new again!
I sort of took this one from SparkRecipes. Here’s what I did:
Sautéed chopped garlic and onion in olive oil
Mixed them together with sliced roasted beets, a bunch of goat cheese, salt, and pepper (I finally found it!!)
Popped it in the oven at 250*f for ~10 minutes
