Spicy Black Bean Hummus
Another super easy bean dip, this one taken from Pop Sugar.
My modifications were as follows:
I’ve gotten really skeptical about putting raw garlic in things because I can’t seem to find any that’s actually fresh, so instead I used a garlic olive oil instead of plain olive oil, and that worked great.
I only had half a lemon – it would have been good with more, but it was fine this way.
I drained the beans but didn’t rinse them – does anyone know whether this is a good idea? I know bean soaking water is no good, but what about what’s in the can? Anyway, it tastes better if you keep the goopy can part, so I did.
I used cayenne (not jalapeño – they give both options)
I sprinkled parsley on top – so good and highly recommended!!
