Churros
My GF friend put the idea into my head to make churros, and I have this great pan my other friend gave me from Our Place that is perfect for frying. So finally last night we made them. Not hard! and not bad! We used this recipe from The Cookie Rookie and followed it pretty much to the letter. Here’s what you do:
Bring to boil, then reduce to low:
- 1c water
- 1/4c butter, cubed
- 1T sugar
- 1/4tsp salt
Stir in until smooth:
- 1c flour (we used a gf 1:1 blend)
The mixture becomes very thick but don’t worry!
Put the whole thing in the bowl of a stand mixer and allow to cool for a couple minutes. Then add in and mix on high until smooth:
- 1 egg
- 1/2tsp vanilla
Put this all in a piping bag with a star tip. Pick one that will make deep grooves – our star tip didn’t make as deep of grooves as would be ideal, but it still worked out.
Heat 1-2 inches of oil in a deep skillet on med-high. Ideally the oil will be at 375*f when you make your churros, but our temperature varied and the result was fine across the board.
Let the churros sit on paper towels for a minute, then roll them in a mix of:
- 1/2c sugar
- 1tsp cinnamon
Optional: make a chocolate ganache to dip them in using 3oz dark chocolate and 1/2c heavy cream. We made this but decided the churros were better plain.
