Simple Basil Garlic Scape Pesto with Pumpkin Seeds

  This week in my CSA haul I got 2 garlic scapes and 2 bunches of basil – and I had some gf pasta in my pantry and was in the mood for comfort food… Pesto it is! This recipe from Jeanette’s Healthy Living was so minimal, which was good because I didn’t have anything like parmesan or lemon or whatnot. All they say to do is:

– Blend together until starting to get uniform (which I did in my immersion blender – food processor attachment):
— Garlic Scapes (you might have to break them up)
— Basil leaves

– Add in olive oil (I say do this to taste – if you want it creamier, add more. If you want it chunkier, add less)
– Add in salt and pepper

– And then I decided to add in pumpkin seeds, which they don’t call for (and they don’t even call for pine nuts!) but I wanted a bit of fun texture, and it worked out great
