Paleo Meatloaf
This is so delicious and easy – kind of tastes like a really delicious burger, but apparently I can call it meatloaf because the original recipe from Inspired Eats does, and because I made it in a loaf pan! Here’s what you do:
Mix together:
– 1lb ground beef (or some other ground meat)
– 1/2 peeled red apple (I used a fuji, and I followed the “peel” instruction because I thought it might be a weird texture thing if I didn’t…)
– 1/2 onion, chopped
– A couple cloves of garlic, chopped
– Herbs – I used thyme and basil since that’s what I have, but they say oregano. Also salt and pepper, and I added in paprika (as always)
– (They also say a dash of coconut aminos, which I really have to get – everything seems to be calling for it these days)
Mix in an egg
Bake in a loaf pan at 350*f for ~35-40 minutes
Let sit for a few minutes, then serve!
