Easy Salmon with Spinach, Tomatoes, and Thyme

IMG_2502-0.JPGI was making dinner at someone else’s place and I had no idea what they had so I wanted to bring everything with me, and for it to be quick and easy once I got there, with minimal cleanup. Enter this recipe from the kitchn. They say you can use any fish for this recipe, and I chose salmon. Here’s how it went down:

Put in a container:
– A large salmon fillet
– A few thin slices of red onion
– 1/2tbsp butter (easier to transport, but you could also do olive oil)
– 20+ cherry tomatoes
– 2 large handfuls of baby spinach
– 4 sprigs of fresh thyme
– 1/2 lemon
– Salt and pepper shakers (unless you can reasonably assume they have those…)
– Enough tinfoil to wrap the whole thing comfortably in a pouch

When you get there:
– Put the spinach in the center of the tinfoil
– Lay the fish on the spinach
– Lay the onion and thyme on the fish
– Cover and surround with tomatoes
– Dot with butter (or oil)
– Salt and pepper
– Seal the tinfoil into a pouch and bake (on a baking sheet if they have) at 400*f for ~20 minutes until the fish is done!
– Serve
