Yogurt and Mustard Baked Chicken

This is a pretty simple concept: mix yogurt with a bunch of stuff, pour it over chicken, and put it in the oven. What’s not to love?

The recipe I found from Dashing Dish called for a lot of stuff I didn’t have, so I decided to spice it up with some blackberry mustard I had. I also put in grated gruyere, chopped parsley, and salt and pepper.

I only had one chicken breast so I put it in a bread pan since I wanted the sauce to stay on it. I baked it at 375*f for ~30min.

This was pretty good, although I have some suggestions: The yogurt mixture was the delicious part and it didn’t really saturate the chicken, so if I were to do it again I would either cut the chicken into pieces so they could all get the yogurty goodness, or I would marinate the chicken beforehand – maybe in some sort of contrasting flavor.
