Flourless Chocolate Cake
We had a little family reunion in Yosemite this weekend (where there was no cellphone reception and therefore no ability to post – sorry!) and it was my aunt Maria’s 60th birthday! Thinking ahead, my aunt Jan brought with her all of the ingredients to make an incredible chocolate cake that ingeniously uses cocoa instead of flour! So amazing, so chocolaty, so easy, so naturally in line with so many alternative diets – why have I never heard of this before???
Double boil (and by ‘boil’ I mean ‘simmer gently’) until they melt:
– 8oz dark/bittersweet chocolate
– 1c butter
Whip in
– 1 1/2c sugar
– 6 eggs – one at a time
– 1c cocoa
Pour the batter into a parchment-lined springform pan and bake at 375*f for ~35 min
Turn out onto a plate and let cool, then sprinkle with more cocoa powder.
Serve with homemade whipped cream!
Also, somehow there was a leftover piece the next morning and it was potentially even better than when it was fresh, so keep this in mind as a make-ahead.
