Sun-Dried Tomato and Kale Omelet
This was less of a recipe and more of a delicious combination, but I wanted to share it with you.
– Sun-dried tomatoes in olive oil
– Feta with herbs and garlic
– Salt and pepper
Use the sun-dried tomato olive oil to sauté the garlic, and then the kale and tomatoes. Set this aside
Pour in the eggs with salt and pepper, omelet-style and let them sit for a bit and then dump the vegetables on one side. Top this with the feta. Fold, and flip.
