Simple Pizza Sauce
I had just made Cauliflower Pizza Crust and needed sauce for it. I thought I had a rough idea of what would be involved so I didn’t really consult a recipe before heading to the store. As a result, I came home with fresh tomatoes and tomato paste – when it turns out all the recipes call for canned tomatoes. No matter! I basically used Modernist Cuisine’s recipe and just substituted diced fresh tomatoes for the canned. Also I didn’t do the pressure cooker part.
– Sauté chopped garlic in olive oil
– Add in the diced tomatoes (3) (I also removed the seeds, which I’m not sure made it better or worse) and cook down until it’s thick and delicious-looking.
– Add in salt and pepper
– Spread on your pizza!
The three tomatoes didn’t quite make as much sauce as I would have liked, but it worked ok, and was certainly delicious!
I topped my pizza with mushrooms, peppers, and a mix of mozzarella, Jarlsburg, and Parmesan cheeses. Yum!
