Slow-cooker Aduki Bean Soup

I cook all the time (clearly) so one would think if I soaked some beans I would find something to do with them before several days had passed and they were exploding out of the cup. It was kind of my last chance to use these beans before they die, but it was a work night and I got home super late – I couldn’t wait up for the beans to cook, and then do something with them…

Enter the slow cooker!! I googled “Aduki Beans Crock Pot” and found this recipe from CDKitchen. So easy!
– Put the soaked beans in the pot
– Add olive oil
– Carrots (I used cauliflower – not the same thing, but it’s what I had)
– Ginger root (they say finely chopped – I didn’t do that, but it might have been a good idea)
– Garlic
– Onion
– Cumin
– Lime
Cover it with water and then leave it to cook on low overnight. In the morning, add salt, pepper, and cilantro (I used parsley, which was totally good, although I’m sure cilantro would have been also)

And that’s it! Instead of wasted beans I had a delicious and healthy soup! Although I’ll try to be more careful in the future…
