Paleo Breakfast Bars

Time for new breakfast bars, and I’m glad I found these from Elena’s Kitchen! Basically you just take a bunch of good things, mash them together in a food processor, and the bake them. So good! So easy. Here’s what I put in:

– 1 c Almond meal
– 2 tbsp Honey (I prob used a little less)
– 1/4 tsp Salt (I used corse salt, thinking it would get chopped up in the food processor – it didn’t, there are little salty bursts throughout these things. Not bad, but not my intention)
– 1 tbsp water
– 1 tsp vanilla (such a delicious idea! I should probably start using vanilla more)
– 1/4 c Coconut oil

Pulse this all together first, then add:

– Dried apricots (they called for raisins, which I didn’t have. Also, chop these up first, my cuisinart had a hard time)
– Raw almonds (they called for slivered – why when you’re processing them anyway?)
– Unsweetened coconut (I actually made these the same day as the truffles, which is probably why I ran out of coconut for them…)
– Pumpkin seeds (the small handful I had left!)
– Sunflower seeds
– Sesame seeds (not called for but I have so many!!)

Press it all into an 8in square pan, and bake at 350*f for ~20 minutes. Mine got a little brown around the edges, but that’s it.

These are super dense, not crumbly at all. They remind me of those everything bars that have coconut and chocolate and gram cracker crust that are all gooey and sticky and sweet, except that these are breakfast, not dessert, and they’re made with all good ingredients!
