Green Beans with Pine Nuts and Grapefruit Zest

This came about because I’d bought green beans, and I had parsley and pine nuts in my fridge from yesterday’s eggplant dip.

I searched on epicurious for a recipe that would work and found this one – so easy and delicious! Just blanch the green beans and toss with olive oil, pine nuts, parsley, and zest!

The only ingredient I didn’t have was lemon, so I used grapefruit zest instead, and it ended up being refreshing and delightful!
