Stir-fried Greens with Cherries and Mixed Nuts

What I had in my kitchen tonight was some stir-fry greens that were dying, some scallions that were almost dead, dried unsweetened cherries, and salted mixed nuts (the latter 2 I’d originally bought to put in my oatmeal, but hey). And I thought I should be able to make something with all of them.

Googling all sorts of combinations, the closest dish I was able to find was balsamic tofu cranberry and apple stir-fry from Vegetarian Nutrition, so I basically made it up. But at least that gave me the order of events!

Sauté the onion, add in the greens until soft, add in the scallions, (add in garlic – I forgot about that) add in the cherries and nuts, then add the balsamic and salt. Voila! And it was really good!!!
