Mushroom Radicchio Rosemary Bake

This was originally a lasagne recipe from Kitchen Culinaire but I wanted to make it gluten free so I ended up using curly rice pasta and just mixing it all together.

I also decided to use Greek yogurt instead of whipping cream – definitely not an equivalent substitute: yogurt is mainly water, so when I cooked with it, it basically evaporated, as opposed to cream which wouldn’t have. But whatever, I ended up with a tangier, healthier alternative!
