Cucumber Avocado Banana Smoothie with Kumquats and Ginger

My lovely neighbors gave me some kumquats yesterday with which I have limited experience, but now certainly hope to have more!! And I was looking up cucumber banana smoothie recipes (since that’s pretty much what I have in my fridge) and found one that called for pineapple, which I thought would be similar enough to a kumquats because of the sweet-sour thing it has. And then there were a lot of other smoothies saying citrus and ginger, which is a great combination in general, and I always like to put avocado in my smoothies because then I tend to stay fuller longer. So long story short, into my smoothie this morning went:
– 1 cucumber (skin on!)
– 1 banana
– 1/3 avocado
– 3 kumquats
– ~1/2tsp fresh ginger
Immersion blended to perfection!

Great combination, highly recommended. No need for water or ice, in my mind. The cucumber made it watery enough, and the banana/avocado made it creamy and smooth, and the kumquat/ginger gave it that zip and zing! Yum.
