Glorified Lentil Soup
So named because we were trying to be experimental, and then Carey says it’s really just glorified lentil soup. Whatever, it was delicious, and healthy, and made use of all the random stuff in the fridge. Here’s what we put in:
– Red onion (or any onion)
– Chopped ginger
– Cumin seeds
Sautéed in:
– Bacon fat (bacon fat was amazing for this, but use any fat source you want)
Add in:
– Chopped mushrooms (or any vegetables)
– Garlic
– Spices: salt, pepper, paprika, cardamom (why not), coriander, red pepper flakes
Add in:
– Bone broth, including meat from the bones
– Chopped kale stems
Let simmer for a while until the kale stems are softened and the flavors have come together
Add in:
– Cooked lentils
– Chopped kale leaves
Simmer for a few more minutes, and serve. Perfect for a winter night!
