Guest Post: Chickpea Salad

Since I had to go out of town for work, I put a call out to friends for guest posts. Here’s another one from Adrianne:

I love homemade tuna salad (I don’t trust deli made) but I always end up eating it obsessively for months on end and then I’m sick of it. I needed another healthy protein packed option for my pescararian diet and I came upon this chickpea salad from Grab a Plate. Ding ding! We have a winner.

I used:
1-can of garbanzo beans
After I rinsed the beans I used a potato masher to smoosh the beans since I don’t have a food processor.
Then I added:
-About a tablespoon of mayo
-A couple tablespoons of Dijon mustard
-A clove of garlic
-A couple stalks of chives (diced)
-A stalk of celery (chopped)
A couple dashes of:
-Salt
-Pepper
-Cajun seasoning

Then I toasted up an English muffin with a bit of olive oil and sliced some avocado for a garnish. While the whole can-o-beans didn’t fit on my sandwich I saved the rest and the other half of the avocado for lunch the next day. Hope you enjoy it!
