Strawberry “Pie”

Since having kids, I’ve lost the energy (and certainly the time) to cook how I used to: elaborate and impractical recipes, never making the same thing twice, etc. Now it’s the same baked salmon, marinated chicken, and kale pesto practically every week. But sometimes on the weekends my 2.5-yr-old and I will bake together, and that has been really sweet 😉.

Strawberry “Pie”

Today she wanted to make Strawberry Pie, but she didn’t want crust…. I found these Strawberry Oatmeal Bars from Well Plated which we decided to bake in a pie plate and that seemed to fit the request!

She helped with many of the steps: chopping the strawberries with her plastic knife; mixing the dry ingredients together; pressing the base down into the bottom of the plate; making sure the strawberries were in an even layer; and sprinkling the crumble on top!

We basically followed the recipe but used frozen strawberries that we defrosted (we reserved the juice to use as a “sauce”); we used coconut sugar instead of brown sugar and turbinado instead of granulated; and of course the pie plate (and no parchment paper, just some non-stick spray).

The result was totally delicious! Though my kid of course only ate the strawberry part.
