Mixed Rice with Black Beans and Broccoli
This was one of those “I have broccoli and black beans – what can I do with them?”
I found a recipe from Finding Joy in my Kitchen that gave me the blueprint for this simple and satisfying dish:
I made a mix of brown rice and wild rice
(mainly because I really need to go shopping for staples – but the mix ended up being delicious! And now I’m inspired to start using wild rice again [you can take the girl out of Minnesota…])
I cooked it with a veggie bouillon cube and some salt
I sautéed onion and garlic in coconut oil and then added in
2 heads of broccoli and
a can of black beans (unrinced).
I let that simmer for a while until everything seemed to blend.
I added salt,
paprika,
cayenne,
coriander,
sesame seeds (for some reason I have a ton!), and
toasted sesame oil.
Once everything was done I stirred it all together and that was that!
The only thing I would do differently is that I think I added too much salt – I have this fancy new rock salt that a friend gave me as a housewarming gift, and I think it makes it look like you’re putting in less than you are, but whatever, it was still super good.
